  • Cobblers-peach, cherry, blueberry, blackberry
  • Homemade pie (make earlier in the day; it's easier than you think)
  • Ice cream
  • Jell-O with fruit, make early in the day on a cold weekend
  • Pineapple upside-down cake
  • Puddings-lemon, chocolate, banana, tapioca, pudding pies
  • Spice cake, apple cake, carrot cake or gingerbread
  • Strawberry shortcake with whipped cream
  • Watermelon, in season

Apple Crisp

8-10 apples peeled and sliced 1 tsp. cinnamon
1 cup brown sugar ½ tsp. nutmeg
1 ½ cups oats 1 stick margarine cut up

Place apples in bottom of Dutch oven. Mix remaining ingredients together and place on top. Pat down. BAKE 20-30 minutes until apples are soft.

Variation - add 1 can of whole berry cranberry sauce and ½ cup of chopped walnuts or pecans.

Banana Boats - Slice banana lengthwise 3/4 of the way through. Do not peel! Add chocolate chips and mini marshmallows. Wrap in foil. Bake on coals for about 10 minutes.

Blueberry Muffins - Prepare mix according to package directions. Preheat oven and place foil muffin papers inside. Fill oven with foil papers, as they will not stand up unless touching one another. Carefully spoon batter into muffin papers. BAKE with only 1/3 of the amount of coals on the bottom as you have on top. Too many coals on the bottom will burn the muffins! Bake according to package directions.

Lazy Cobbler - (very sweet)

1 large can sliced peaches 1 pkg. white cake mix
Butter Cinnamon

When oven is preheated, pour whole can of peaches and juice into oven. Add dry cake mix on top of peaches. Place several pieces of butter on too and sprinkle with cinnamon over all. Bake about 45 minutes. Serves 8-10.

VARIATIONS:

  • Use canned cherries and add sugar to cherries.
  • Use canned apples with tsp. cinnamon & tsp. allspice to apples
  • Use canned blueberries or blackberries and omit cinnamon
  • Stir cake mix & peaches to provide spongier layer of cake.

Dutch Oven Baklava

3-4 cups walnuts, finely chopped

Glaze:

½ cup sugar

¼ cup sugar

1 tsp cinnamon

½ cup honey

2 cans crescent rolls

2 TBSP margarine or butter

 

2 tsp lemon juice


Combine nuts sugar and cinnamon.  Unroll one can of rolls and place in bottom of oven and ½ inch up the sides.  Seal perforations.  Spoon the nut mixture evenly over the dough.  Unroll second can and form so it can be placed on top of nut mixture.  In small pan mix glaze ingredients and heat to boiling.  Spoon half over the dough.  Bake for about 30 minutes, or until golden brown.  Spoon the remaining glaze over hot pastry.  COOL COMPLETELY.  Cut into triangles.
