BBQ ham sandwiches Quick
and easy for lunch or a snack
1 lb. chipped ham per 5 people Bottle of BBQ Sauce
Buns
Separate ham slices and drop into Dutch oven. Add
BBQ sauce and heat through.

Grilled cheese sandwiches - butter two
slices per sandwich and assemble with buttered side out. Place on griddle and turn when
brown. Keep warm until serving.
Tomato soup - Add milk or water
according to directions on can and heat, stirring frequently to keep from scorching.
Stirring in the same direction all the time will make soup blend better and not have a
lumpy texture.

Kebabs - this should be done on the small
charcoal stoves. Cut kielbasy, potatoes, green peppers, cherry tomatoes. If fresh
mushrooms are used, coat them with vegetable oil. Skewer alternately on the sticks. Season
vegetables with garlic salt. Turn frequently until evenly cooked. If using beef instead of
kielbasy, marinate in Italian dressing or sprinkle with Worcestershire sauce while
cooking.

Peanut butter & jelly sandwiches
- hint: peanut butter first.

Sloppy Joe’s - Brown hamburger
with a sprinkle of garlic salt in Dutch oven. Drain grease along the edge of the fire
circle then add a jar of sloppy joe mix. Heat through and serve on buns.
Variation - prepare as above then cover
Dutch oven with 10 biscuits from a can. Add lid and coals and bake according to package
directions. Add shredded cheddar and heat 1-2 minutes, just until melted.

Foil Lunches - from
the traditional to some new variations.
Hamburger Foil meal - (serves 8)
This old Boy Scout
standby has been feeding kids since Scouting began.

8 carrots |
| 1 potato per person |

Butter |
Divide hamburger in half, in half again and then
again so you have eight equal parts. Cut 12" x 32" piece of foil and fold in
half to 12" x 16". Form hamburger into patty and place in middle. Slice potatoes
and place next to meat. Do carrots and onions the same. Top with heaping TBSP of butter
plus salt, pepper, garlic salt if desired. Use drugstore fold on foil (see drawing) and
place on coals. Cook 15 minutes on hot coals, turn, and cook 15 more.

Ham and Pasta Foil Dinner
8 4-oz slices ham 8 18x12 inch PCs. of foil
2 1-lb packages Green Giant Pasta Accents White
Cheddar frozen Vegetables with Pasta
In foil place one ham slice and 1/4 of a bag of
vegetables and pasta. Wrap and heat 10-15 minutes per side.

Cheesy Chili Dogs and Corn in Foil
| 2 15-oz cans of spicy chili beans |
8 Hot Dogs |
| 2 med. onions, sliced and separated into rings |
4 ears fresh sweet corn or 8 frozen halves |
| 8 slices American Cheese |
8 18x12-inch pcs. Foil |
Spoon 1/4 can of beans onto each foil. Top with
onion rings, 1 cheese slice, 1 hot dog and ½ ear of corn. Wrap and heat 10-15 minutes per
side, turning often.

Taco Burger and Potato Packets
| 2-lbs. Hamburger |
½ cup milk |
| 1-cup bread crumbs |
6 cups frozen southern style hash browns |
| 4 TBSP taco seasoning mix |
2 cans condensed fiesta nacho cheese soup |
Combine breadcrumbs, hamburger, taco seasoning and
milk. Mix well. Form 8 patties. Combine potatoes and soup. Mix well. Place patty on foil,
cover with potatoes. Wrap and heat 10-15 minutes per side, turning often.

Chicken Cordon Bleu Packets
| 8 boneless chicken breast halves |
8 1-oz slices cooked ham |
| ½ cup mayonnaise |
8 slices Swiss cheese |
| 2 TBSP mustard (Dijon if you have it) |
8 18x12 inch pcs. Foil |
Place chicken between plastic wrap or wax paper
& pound to about 1/4 inch thick. Combine mayo. and mustard. Place chicken breast on
foil and spread with 1 TBSP of mayo mixture. Top with slice of ham and slice of cheese.
Fold in half. Cook for 20-30 minutes, rearranging several times.

Chicken Drumstick Packets
| 16 chicken drumsticks |
1 cup BBQ sauce |
| 8 med. unpeeled red potatoes, sliced |
8 18x12 inch pcs. Foil |
| 2 med. onions, sliced and separated into rings |

Place 2 drumsticks onto foil. Add potatoes, onions
and BBQ sauce. Cook for 20-30 minutes, rearranging several times.

Reuben
Sandwich – place meat on griddle in piles big enough for each
sandwich and heat through. Meanwhile
butter rye bread and place on griddle to toast.
When meat is thoroughly warmed place a piece of Swiss cheese on each.
Let stand until it melts partially.
Add meat and cheese to toasted rye.
Add some well-drained sauerkraut and a bit of Thousand
Island dressing. Place second
piece of toast on top. Serve
warm.

Grilled Kolbasi Sandwiches - Slice
meat lengthwise and place face-down on grill.
Meanwhile sauté peppers and onions in a small frying pan over a trail
stove with just a little bit of oil.

Meatball Splash Sandwiches - Heat
meatballs in tomato sauce. Toast
buns on griddle over fire. Add
meatballs to buns. Top with
shredded mozzarella. Wrap in foil
and heat over coals briefly until cheese melts.
Be careful not to burn them.

Picnic Taco Nachos – 1 pkg for each
4 patrol members

15 oz can black beans, rinsed, drained and mashed

green onions, sliced

4-oz can chopped mild green chilies, drained

cups shredded Colby-jack cheese

tsp. Taco seasoning mix

Start
charcoal. Spray 30x18-inch piece of
foil with cooking spray. Spread
chips on foil. Mix beans, chilies,
taco seasoning and spoon evenly over chips.
Top with tomatoes and onions. Sprinkle
with cheese. Wrap foil securely
using drugstore wrap. Grill
seam-side up for a couple of minutes until cheese is melted.
Be careful not to scorch.

Italian Chicken Pockets – Makes eight

1 lb boneless chicken breast, cubed |
1 package (3.5 oz) sliced pepperoni |
|
2 TBSP oil |
1 cup spaghetti sauce |
|
1 green pepper, chopped |
4 pita breads, 6 inches, halved and
warmed |
|
1 cup sliced mushrooms |
|
Sauté chicken in oil until no longer pink.
Add green pepper and mushrooms; cook until tender. Stir in pepperoni; heat
through. Drain. Stir in spaghetti sauce; heat through. Spoon into pita
halves. Sprinkle with Parmesan, if desired.
